Ingredients and spices that need to be Take to make Surati Rasavala Khaman:

  1. For making Khaman
  2. 1 cup split chickpeas (Chana Dal)
  3. 1/4 cup broken rice or normal rice
  4. 1/2 tbsp citric acid
  5. 4-5 green chillies
  6. 1 tsp Asafoetida (Hing) powder
  7. 1 tbsp oil
  8. 1 piece ginger
  9. 1 tsp Turmeric powder (Haldi)
  10. Salt as per taste
  11. 5 g eno fruit salt regular flavor
  12. For gravy (raso for khaman)
  13. 3 tbsp chana dal
  14. 3 tbsp urad dal
  15. 3 tbsp tur dal
  16. 3 no of black pepper (mari)
  17. 1 small piece cinnamon (Taj)
  18. 3 cloves (laung)
  19. 4-5 cup water
  20. 3-4 tsp red chilli powder
  21. 2 tsp coriander-cumin powder (dhaniya jira powder)
  22. 1 tsp mustard seeds (Rai)
  23. 6-7 curry leaves
  24. 1 tsp Asafoetida (Hing) powder
  25. 1 tbsp green coriender leaves
  26. Salt as per taste
  27. 1 tsp sugar
  28. For garnishing
  29. 1 cup finely chopped onion and tomato
  30. Pinch chaat masala
  31. A handful green corriander leaves, chopped
  32. Pinch salt & red chilly powder
  33. A handful Sev (namkeen)

Steps to make to make Surati Rasavala Khaman

  1. Sock the chana dal & rice for 4-5 hr than blend it with help of a little amount of water. While blending add other ingredients as mentioned above in khaman receipe except eno and make coarse paste. Mix well and keep it in warm place for 5-6 hr for fermentation.
  2. Now add 1 tbsp of oil in batter and mix it than add eno and small quantity of water into mixture. Mix it properly in one direction. Grease the plate & pour the batter than put it in a steamer for 20 mins on medium-low flame.
  3. After 20 mins switched off the flame and cool it for 20 mins. Than cut into pieces, sprinkle some water and add tempering of oil, mustard seeds on it. If you don't like spicy taste than no need to add gravy you can directly serve it with onions and sev namkeen.
  4. Now for gravy preparation take all 3 dal, black pepper, cinnamon, clove in pan and roast it for 3-5 min with continue stirring. Cool it down and grind it without adding water. Than transfer it in seperate bowl and add 3-4 tbsp water to make paste.
  5. Add 3-4 cup water gradually in it and mix it properly without having any lumps in it. Now take pan heat oil and add mustard seeds, curry leaves and remaining gravy ingredients. Add prepared dal mixture in it and cook for 10-15 min it will become thick.
  6. Take chopped tomato and onion in bowl and sprinkle red chilly, chat masala and salt on it and mix it. Take a deep plate or bowl first add crushed khaman than add hot gravy and salad mixture and on top of it add sev namkeen and coriander leaves. Serve hot gravy only.
