  8. Stuffing-
  9. 3/4 cup fried chana dal flour
  10. to taste salt
  11. 1/2 tsp. turmeric powder
  12. 1 onion, chopped
  13. 1 tsp. ginger-garlic paste
  14. 1-2 green chilies, chopped
  15. 1 tsp. red chili flakes
  16. 1 tbsp. lime juice
  17. 1 tbsp. pickle masala
  18. 2 tbsp. coriander leaves
  19. 1/2 tsp. ajwain (carom seeds)
  20. 1 tsp. kalonji
  21. 1 tbsp. mustard oil
  22. 1/2 tsp. pepper powder
  23. 1 tsp. coriander-cumin powder
  24. Chokha-
  25. 1 medium eggplant, roasted, skin discarded & mashed
  26. 1 potato, boiled & mashed
  27. to taste salt
  28. 1 onion, chopped
  29. 2 green chilies, chopped
  30. 1 tomato, chopped
  31. 1 tbsp. mustard oil
  32. 2 tbsp. coriander leaves, chopped
  33. oil to deep fry

Instructions to make to make Litti Chokha

  1. Roast the eggplant and boil the potato.
  2. To the mashed eggplant and potato, add all the above mentioned ingredients.
  3. Mix well and keep aside.
  4. Take 3/4 cup of roasted chana (Gram) dal.
  5. Grind to a fine powder.
  6. To it add rest of the ingredients for stuffing.
  7. Mix well and keep aside.
  8. Litti - In a bowl, mix together all the mentioned ingredients and...
  9. Knead into a stiff dough with required quantity of water. Cover and keep aside.
  10. Divide the dough into 8-9 equal portions.
  11. Roll out each portion with your fingers into a small poori. Make a hollow and put 1 tbsp. of the stuffing in it.
  12. Bring all the edges together and make a round ball. Flatten it slightly. Fill rest of the dough with the stuffing and keep aside.
  13. Heat oil in a pan and gently slide the Litti into it.....
  14. ......and fry on a medium flame on all sides till golden in colour.
  15. Drain on a kitchen towel.
  16. Serve them hot on a bed of chokha
  17. With green chilies and sliced onion.
