  22. 1/2 brinjal / baingan, cubed
  23. 1/4 tsp turmeric
  24. 1/2 tsp jaggery
  25. 1 tsp salt
  26. 1 cup water
  27. 3/4 cup tamarind extract
  28. 1 cup toor dal, boiled
  29. 2 tbsp coriander, finely chopped
  30. 1 cup rava / semolina / suji, coarse
  31. 1 cup curd / yogurt
  32. 1/2 tsp salt
  33. 1/4 cup water
  34. 1/4 tsp eno fruit salt or pinch of baking soda

Steps to make to make Idli sambar

  1. Firstly, in a large kadai heat, 2 tsp oil and splutter tempering.
    add 4 shallots, 2 chilli and saute for a minute till it changes colour.
    further, add 1 tomato and continue to cook.
  2. Now add mixed vegetables and saute for 2 minutes.further, add ¼ tsp turmeric, ½ tsp jaggery, 1 tsp salt and 1 cup water.mix well, cover and boil for 10 minutes.now add ¾ cup tamarind extract and mix well.cover and boil for 10 minutes.
  3. Additionally, add 1 cup toor dal, water and mix well.add in 4 tsp of prepared sambar powder.boil for a minute, until the flavours are well absorbed.
  4. Add in 2 tbsp coriander leaves and mix well.
    finally, enjoy idli sambar with hot steamed idli.
  5. Firstly, in a large pan roast 1 cup rava for 5 minutes or till it turns aromat.allow it to cool completely, and transfer roasted rava to a mixing bowl.add in 1 cup curd, ½ tsp salt and combine well without forming any lumps.
  6. Allow to rest for 20 minutes or till rava / sooji absorbs water.
    again add ¼ cup water or as required to prepare idli batter consistency.just before steaming the idlis, add in ¼ tsp eno fruit salt or pinch of baking soda and give a gentle mix.
  7. Pour the batter immediately onto greased idli plate.
    steam them on medium flame for 15 minutes or till the idli are cooked completely.finally, serve soft sooji idli or plain rava idli along with chutney and sambar.
